For instance, if your spine is dislocated in different ways could that affect your memory etc?

Subluxations (named by you "dislocations") can cause pain and poor circulation, which mentally and physically fatigue us, which in turn makes it harder to remember small details - the worse the pain, the more you tend to forget, just because dealing with the pain saps your energy. As for "etc.", well, this same idea can be reapplied to other things too. For example, I know from experience that when a certain vertebrae in my neck is "out" too far, I will start experiencing migraine symptoms.
